This classic Egg Fried Rice recipe is quick, flavorful, and perfect for using up leftover rice—ready in just 15 minutes with simple ingredients. It’s a go-to weeknight meal or a satisfying side that works for breakfast, lunch, or dinner.
Ingredients
-
2 bowls (about 400g) of rice
Cold cooked rice
-
2 Eggs
2 large or 3 small
-
2 tbsp of vegetable oil
-
1/4 tsp (adjustable) of Salt
-
A small amount of onions
Green onions, chopped
-
1 tsp of low-sodium soy sauce
Instructions
-
Step 1: Prep Ingredients
Break up cold rice with hands to avoid clumps (key for fluffy fried rice); chop green onions (separate white and green parts);
-
Step 2: Cook Eggs
Heat 1 tbsp oil in a wok or skillet over medium heat. Pour in beaten eggs, stir gently with a spatula, and leave them in the pan when eggs are just set (slightly runny inside) to avoid overcooking.
-
Step 3: Fry Rice
Turn to medium heat, add broken cold rice, stir-fry quickly for 2-3 minutes until grains are separated and slightly translucent at the edges (gently press clumps to break them during cooking).
-
Step 4: Season & Combine
Add the green onions. Break the eggs into small pieces with a spatula, stir-fry them thoroughly with the rice and green onions, then add soy sauce, salt. Continue stir-frying for 1 minute to coat every grain of rice evenly with the seasonings.
-
Step 5: Serve
Turn off the heat, then serve hot.
