This spicy vinegar cabbage salad is my go-to quick side in summer. Napa cabbage is cheap, keeps well, and turns into something bright and appetite-opening with just salt, a hot oil sizzle over garlic and chili, then a splash of soy and vinegar. The trick? You’ve got to salt and drain the cabbage properly—otherwise it weeps water and turns limp. I’ve tried skipping the salting step, and I’ve used apple cider vinegar, rice vinegar, even white vinegar. In the end, regular Chinese black vinegar or fragrant aged vinegar tastes most balanced; apple cider gives it a weird tang. It goes with congee, noodles, or even plain steamed buns. Takes ten minutes, no stove needed beyond heating a spoonful of oil—perfect when it’s too hot to cook.
Ingredients
-
Napa cabbage (core removed)
1 medium head (about 500 g / 1.1 lb)
-
Salt
1 tsp + ¼ tsp
-
Garlic
2 cloves, thinly sliced
-
Neutral oil (e.g., canola or vegetable)
2 tbsp
-
Apple cider vinegar
1 tbsp
-
Granulated sugar
½ tsp
Instructions
-
Step 1: Trim the core and slice the leaves thin
Remove the hard core from the cabbage. Slice the leaves into thin strips, about ½ cm (¼ inch) wide.
-
Step 2: Salt and massage to draw out moisture
Put the cabbage in a large bowl, sprinkle with salt, and gently massage it with your hands. Let it sit for about 15 minutes. You’ll see liquid pooling at the bottom, and the cabbage will soften slightly but still hold crunch. Don’t skip this—it’s what keeps the final salad crisp, not soggy.
-
Step 3: Rinse lightly and squeeze dry
Rinse briefly under cold running water to remove excess salt, then squeeze tightly with your hands—or wrap in a clean kitchen towel and twist to remove as much water as possible. The drier it is, the better it soaks up the dressing.
-
Step 4: Toss the cabbage with hot oil dressing
In a small heatproof bowl, combine the sliced garlic, ½ tsp chili flakes, and ¼ tsp Sichuan peppercorns (if using). Heat 2 tbsp oil in a small pan over medium heat until shimmering (about 30 seconds), then carefully pour it over the spices—the mixture should sizzle gently. Immediately add 1 tbsp soy sauce, 1 tbsp apple cider vinegar, ½ tsp sugar, ¼ tsp salt, and ¼ tsp chicken bouillon (or white pepper). Stir until the sugar dissolves, then pour the entire dressing over the drained cabbage. Toss well, let sit 2–3 minutes for flavors to meld, and serve right away or chill briefly for a cooler salad.
Chef’s Notes
-
Not too spicy: The ½ teaspoon chili flakes gives mild heat. Reduce to ¼ teaspoon if you prefer very little spice. Skip Sichuan peppercorns if you’ve never tried them—they add a unique tingle but aren’t essential.
-
Crunch is key: Salting and rinsing isn’t optional—it removes water so the salad stays crisp, not soggy.
-
Vinegar note: Apple cider vinegar works great here. Avoid balsamic (too sweet) or white wine vinegar (too sharp).
-
Vegetarian? Just swap chicken bouillon for a pinch of white pepper—or leave it out. For gluten-free, use tamari instead of soy sauce.
-
Best fresh: This salad tastes best within 1–2 hours of making. It won’t keep well overnight—the cabbage softens quickly.
