This savory chicken fried rice is a quick and simple homemade meal perfect for busy weeknights. Tender chicken pieces are stir-fried with fresh vegetables and rice, enhanced with a rich umami seasoning sauce for deep flavor. It’s a versatile recipe for anyone looking for easy fried rice at home.
Ingredients
-
Chicken breast
150 g
-
Cooked rice
300 g
-
Greens
80 g (bok choy or similar), chopped
-
Cornstarch
1 tsp
-
Salt
1/4 tsp
-
Peanut oil
2 tbsp
Instructions
-
Step 1: Marinate the chicken briefly
Cut the chicken breast into small strips. Mix it with cornstarch, 1 tsp seasoning sauce, and 1 tsp peanut oil. Let it rest for about 10 minutes.
Note: The marination step isn’t pictured, but it’s simple and quick—just mix and let it rest before cooking. -
Step 2: Cook the chicken until just done
Heat 1 tbsp oil in a nonstick pan. Add the chicken and cook until the surface turns lightly golden. Remove it and let it cool slightly before shredding.
-
Step 3: Toss the chicken with rice
Add the shredded chicken back to the pan along with the rice. Break up the rice gently so it warms evenly.
-
Step 4: Add greens and seasonings
Add the chopped greens, salt, soy sauce, and the remaining 1 tsp seasoning sauce. Stir until the greens soften and the rice is coated.
-
Step 5: Finish and serve
Give everything a final stir. If the rice loosens easily and the color looks even, it’s ready to serve.
Chef’s Notes
-
Keep the cornstarch on the chicken—this thin coating helps it stay tender.
-
Letting the rice warm briefly in the pan helps it separate naturally.
-
Chopping the greens smaller helps them blend into the rice without clumping.
