This beef and broccoli stir-fry is built on simple ingredients: thinly sliced beef, crisp broccoli, and a light savory sauce. The beef stays tender thanks to a quick marinade, and the broccoli keeps a bright crunch. It’s a reliable weeknight dish that cooks fast and works well with rice or noodles.
Ingredients
-
Beef
150 g, thinly sliced
-
Broccoli
1 head (about 300–350 g), cut into small florets
-
Garlic
4 cloves, minced
-
Green onion
1 stalk, sliced
-
Salt
total 3/8 tsp(1/8 tsp for marinade, 1/4 tsp for stir-fry)
-
Oil for cooking
1.5 tbsp
Instructions
-
Step 1: Slice and marinate the beef
Mix the beef with light soy sauce, Shaoxing wine, dark soy sauce, oyster sauce, cornstarch, and 1/8 tsp salt. Let it sit for about 10 minutes.
-
Step 2: Prep the vegetables
Cut the broccoli into small florets, mince the garlic, slice the green onion, and cut the dried chili into sections.
-
Step 3: Heat the oil and build the aroma
Heat oil in a pan, then add garlic, dried chili, and green onion. Stir until fragrant.
-
Step 4: Stir-fry the beef
Add the marinated beef and stir-fry on high heat for 2–3 minutes, until the slices start to brown on the edges but are still soft in the center.
-
Step 5: Add the broccoli
Add the broccoli and keep tossing for 2–3 minutes, letting it stay green and crisp.
-
Step 6: Season and finish
Add 1/4 tsp salt, chicken powder, and five-spice powder. Mix well and turn off the heat.
Chef’s Notes
-
Stir-frying works best when ingredients have space. Overcrowding lowers the pan’s temperature and makes the beef steam instead of sear.
-
Thin slices cook quickly and remain tender. Cutting against the grain shortens fibers and makes each bite softer.
-
Make sure the oil is hot before adding aromatics or beef. This locks in flavor and prevents sticking.
-
Season part in the marinade and part during stir-frying. This builds deeper flavor without over-salting.
