This simple braised bamboo shoots recipe delivers tender, savory-sweet stalks with a glossy soy-brown sugar glaze—perfect as a light side dish or vegetarian protein boost. I’ve made it dozens of times using fresh or canned bamboo shoots (no peeling required), and it consistently turns out flavorful without overpowering spices or hard-to-find ingredients. It’s a great way to use seasonal spring bamboo shoots or keep pantry-friendly canned ones on hand for weeknight cooking.
Ingredients
-
fresh bamboo shoots (peeled, trimmed, cut into 1-inch pieces)
2 medium (about 8 oz / 225 g)
-
vegetable oil
1 tbsp
-
water
¼ cup (60 ml)
-
toasted sesame oil
½ tsp
Instructions
-
Step 1:
If using fresh bamboo shoots, peel off tough outer layers, trim the woody base, and slice into 1-inch pieces. If using canned, drain and rinse well—no extra prep needed.
-
Step 2:
Heat oil in a nonstick or stainless skillet over medium heat. Add bamboo shoots and cook, stirring occasionally, until edges begin to turn golden—about 3 minutes.
-
Step 3:
Stir in soy sauce and brown sugar. Cook for 1 minute, then pour in water. Bring to a gentle simmer, reduce heat to low, cover, and cook for 5 minutes.
-
Step 4:
Uncover, stir in cornstarch slurry, and simmer gently for 2–3 minutes until sauce thickens slightly and coats the shoots. Remove from heat and drizzle with sesame oil before serving.
Chef’s Notes
-
Rinse canned bamboo shoots well to remove brininess.
-
Sear the bamboo shoots first for deeper flavor.
-
Use low heat when simmering to keep shoots tender but crisp.
-
Add brown sugar gradually to adjust sweetness.
